Milling yield drives price. Raw milling, paddy husked and polished directly without parboiling, recovers 58 to 62% whole kernels. Parboiled sella recovers 68 to 72% because soaking and steaming hardens the kernel against the polisher. Lower yield means more paddy consumed per MT of finished rice, and that cost passes through to FOB. 1121 White ships at $1,165 to $1,205 per MT against $1,095 to $1,135 for 1121 Sella Basmati Rice. Retail demand also pulls white higher: UAE and UK premium shelf accepts only the pearly raw-milled finish.
Three raw-versus-parboiled positions across the 1121 line. Pick by destination market, retail versus food service end use, and the firmness profile your buyer's cuisine demands.

Soak 20 to 30 minutes before cooking. Water ratio 1 cup rice to 1.75 cups water. Bring to boil, reduce to lowest simmer, cover, cook 15 to 18 minutes, rest 5 minutes off heat. The 8.3mm raw kernel elongates to 22mm+, a 2.5x+ ratio, the longest of any commercial rice. Texture is fluffy with separate non-sticky grains. Aroma is the most pronounced of the four processing types because no parboiling step degrades the volatile aroma compounds. Yield: 1 kg cooked produces 3.2 to 3.5 kg.
| Soak time | 20-30 minutes |
|---|---|
| Water ratio | 1:1.75 |
| Cook time | 15-18 minutes |
| Rest | 5 minutes |
| Cooked yield (per kg dry) | 3.2-3.5 kg |

New crop is harvested October to December and available for export from January at the base $1,165 to $1,205 band. Aged 1121 White, 12 to 18 months in climate-controlled storage at the mill, commands a $40 to $80/MT premium. Aging tightens the kernel, drives further elongation, and intensifies aroma. GCC retail specifically requests aged stock; UK and EU branded retail accepts both. Storage carry cost is $15 to $20 per MT per cycle. See aged vs new crop 1121 Basmati.
