Milling yield is the lever. White 1121 is paddy husked and milled directly. Whole-kernel yield runs 58 to 62%, with the balance ending up as broken rice or polish bran that fetches commodity prices. Sella reverses that math. Paddy is soaked in warm water, steamed under low pressure, then dried before milling. The hydrothermal treatment gelatinizes starch inside the husk and hardens the kernel so it survives milling intact. Whole-kernel yield climbs to 68 to 72%. More sellable rice per ton of paddy means we can quote 1121 sella basmati at $1,095 to $1,135/MT, roughly $70 to $100 below 1121 White Basmati Rice. Parboiling also extends shelf life to 18 months and produces the creamy golden colour that GCC buyers specifically request.

Choose 1121 Sella for high-volume Saudi food-service and Iraqi retail where price and shelf life are the levers. Choose 1121 Golden Sella deep golden alternative for the same end-use when buyers demand a darker amber grain on shelf. Choose 1121 Steam Basmati Rice when end-users want near-white appearance with sella-like grain integrity, common in Iran and high-end UAE retail.
Cook time runs 20 to 25 minutes by absorption or 15 minutes pressure-cooked. The parboiled kernel absorbs flavour from broth, ghee, and whole spices without breaking down, which makes it the default rice for Saudi kabsa and Yemeni mandi service. In biryani, the long grain holds its 22 mm+ cooked length through layering and dum, then separates cleanly when plated. For pilaf and pulao, the firm bite survives 4 to 6 hours on a steam table without going gummy. Reheats well over 48 hours, which matters in food-service operations running buffet or banquet volumes. Foodservice operators typically cook 1:1.75 rice-to-water by volume for absorption.
| Soak time | 20-30 minutes |
|---|---|
| Water ratio | 1:1.75 |
| Cook time (absorption) | 20-25 minutes |
| Cook time (pressure) | 15 minutes |
| Steam-table hold | 4-6 hours |
| Best cuisine fit | Kabsa, mandi, biryani, pilaf |

New crop ships from January after the October-December harvest. New crop 1121 Sella is softer and slightly less aromatic. Aged stock at 12 to 18 months carries $40 to $60/MT premium. Elongation tightens past 2.5x, aroma intensifies, and the kernel cooks even firmer. Premium aged stock at 24+ months runs $100/MT above new crop and is limited. Climate-controlled warehousing adds $15 to $20/MT to the storage cost line. Steam-processed 1121 is the practical alternative when buyers want aged-sella performance on a new-crop timeline. Three other processing types are produced from the same Punjab 1121 paddy. 1121 White Basmati Rice is direct-milled, pearly white, the highest aroma retention, $1,165 to $1,205/MT. 1121 Golden Sella deep golden alternative is deep parboiled, amber colour, $1,110 to $1,150/MT. 1121 Steam Basmati Rice is light-steamed pre-mill, off-white, $1,200 to $1,240/MT.
